Vegan Skillet Gnocchi with Spinach and White Beans

  1. 1 16oz package of gnocchi (vegan)
  2. 1 15 oz can of diced tomatoes
  3. 1 15 oz can of white beans, rinsed
  4. Olive oil
  5. 5-6 garlic cloves, minced
  6. 1 yellow onion, sliced
  7. 6 cups of fresh spinach
  8. 1/4 tsp pepper
  9. 1/2 cup shredded vegan mozzarella cheese (Violife, Follow Your Heart, or Whole Foods brand suggested)
  10. 1/4 cup shredded vegan parmesan cheese (Violife or Follow Your Heart recommended)
  11. 1/2 cup of water


  1. Heat a large nonstick skillet with about 1 tbps of olive oil. Add your gnocchi in, and saute until they are soft and start to brown a bit. When done, transfer into a bowl and set aside.
  2. In same skillet, heat another tbsp of olive oil. Add in your sliced onions, and saute for a couple minutes on medium heat. Add in garlic and water, and cover skillet with a lid for about 6 minutes, or until onions are soft.
  3. Add in your spinach, and saute until it is wilted. Add in your beans, tomato, and pepper. Stir well to combine everything, and bring to a simmer.
  4. Add gnocchi into skillet, and mix well. Sprinkle your vegan mozzarella and vegan parm on top and cover with a lid. Once cheese is melted- serve and enjoy!!

Easy vegan dish, that takes 20 minutes to make and full of veg and protein.

Once dish is done, add any extra pepper or salt you need.
