Very easy vegan salad- as a meal, an app, or a side dish! I usually double the ingredients each time I make this. If you have a food processor, the prep process takes minutes!
- 1 15oz can of chickpeas
- 1 15oz can of artichoke hearts, chopped
- 2-3 clove of garlic, minced
- Juice from 1 lime
- 1 cup fresh cilantro, chopped
- In a large bowl, combine all of the above. Season to taste as needed. Enjoy!
